Lett’uce Have It! Loaded Salad

When I come from the gym and after a good work out, I love making this salad, which is deliciously fulfilling!


Ingredients:

Truly from the spirit, this recipe has no exact measurements, but it’ll be delicious no matter what!

Main Salad:

  • Kale 

  • Baby Spinach

  • Sliced Red Onions

  • Sliced Cucumbers

  • Cherry Tomatoes

  • Chopped Cilantro

  • Chopped Celery

  • Seasoned Chickpeas (hold your point) or pre-made Hummus

  • Large Chopped Pieces of Walnuts

  • Seasoned (sliced) Olives

  • Sliced Avocado

  • Chopped Dates


Hibiscus Vinaigrette:

  • 1 cup of Hibiscus Tea (1 tablespoon of Hibiscus leaves in 1 cup of water, to make a strong batch)

  • 1 cup of Spring water

  • ½ cup of Apple Cider Vinegar

  • ½ cup of lemon juice

  • ½ cup of extra virgin olive oil (my daughter turned me onto Tunisian olive oil, simply delicious!)

  • 1 teaspoon ground Black pepper

  • ½ - 1 teaspoon sea salt/kosher salt

  • 2-3 large garlic cloves – peeled and minced

  • 1 large shallot – peeled and diced

  • Optional: agave or honey for sweeter taste


Instructions:

  • Salad - In a bowl place your kale, and sprinkle with a few drizzles of olive oil, black pepper and sea salt/kosher salt, and massage to bring out the beautiful green colors while softening the kale a bit. This is truly an optional step if you do not mind the tougher texture of your kale.

  • In another bowl add rinsed chickpeas and add our favorite seasonings. I use creole seasoning (McCormick has a delicious gourmet mix) or green goddess seasoning (I get that at Trader Joe’s). If you are using canned chickpeas, I recommend that you rinse them thoroughly to remove the flavors of the liquid they were in. If you are like me, you probably bought dried chickpeas and soften them in a slow cooker or regular pot, and stored them in the fridge or freezer for future use (it’s so simple and reduces the risk of added chemicals often found in canned foods)

  • Add all the other chopped ingredients to a bowl and add chickpeas, then toss your kale through this mixture and lett’uce have it! Don’t forget to slice up the avocados and garnish your salad, or if you are like my daughter, you may just chop the avocado and toss it with the other ingredients. Do you!

  • Hibiscus Vinegraitte – I like to keep it simple and add all ingredients to a bowl, whisk and pour over my salad to taste.
