As a child, I remember eating a lot of peanut sauce with various dishes, inspired by Javanese/Indonesian cuisine, which is part of the Suriname culture. Yes, Suriname is one of the most ethnically diverse Caribbean countries, because after slavery, the Dutch government still needed laborers and brought servants from the island of Java to Suriname, which included the Javanese cuisine. This dish is inspired by culinary diversity I experienced as a child.
Ingredients:
Rolls
10-12 Rice paper wrappers
1 cup of Mung bean noodles
2 cups of fresh (baby) spinach leaves
1 cup of red cabbage
1 cup of cucumber cut into match sticks (thin or thick, do you!)
1 cup of bell peppers cut into match sticks
1 cup chopped green onions
½ cup of cilantro
Thinly sliced baby portabella mushrooms
Sesame seeds (optional)
Dipping Sauce 1
1 cup of peanut butter
½ cup of raw cashews
1-2 tablespoons liquid aminos or tamari
1 tbsp rice vinegar
1 tablespoon chili garlic sauce
1 tablespoon agave or maple syrup (optional)
Juice of 1 lime
Water (to thin the mixture if it’s too thick for your liking)
Dipping Sauce 1
Instructions
Chop all your ingredients into long thin strips (except for the green onions, which are just chopped very fine).
Soak your dried mung beans in some hot water and let them sit until they are reasonably soft, they will continue to soften while you are using them in the wrap.
Add room temperature water to a separate bowl, large enough to dip the rice paper without it folding over. Dip each rice paper wrap for no more than 10 seconds and lay flat on a surface like a countertop, or large plate.
Add ingredients (to include the chickpeas) to the middle of the wrap, by layering them on top of each other, but don’t overfill. Wrap one side of the wrap around the ingredients, and then the other, tucking it in carefully, and rolling the wrap towards the edge to seal it.
Repeat for each wrap.
Dipping sauce – Add all ingredients together and mix until well combined.
Now go ahead and dip your roll into the nutty dipping sauce, and yummie! There you go!
